3 bananas, mashed
90g coconut sugar
90ml coconut oil, melted
2 eggs
150g cottage cheese
4 tbsp hemp hearts (or substitute with chia or flaxseeds)
1 tsp vanilla extract
210g all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
½ tsp salt
2 tbsp pecans, chopped (optional, but delicious)
Instructions:
Preheat the oven to 160°C (325°F). Grease a 9x5-inch loaf pan or line it with parchment paper.
Mash the bananas in a large bowl, then whisk in the coconut sugar, melted coconut oil, eggs, cottage cheese, hemp hearts (or chia/flaxseeds), and vanilla extract until well combined.
Add the dry ingredients – flour, baking soda, cinnamon, and salt. Stir until just combined. Do not overmix.
